What's Cooking on the Prairie

   Today is the link up over at  Judy's Patchwork Times  and the ingredients this time is Orange Juice. This is a recipe I have been making for some time that I found in one of Dr. McDougall's book. Next weeks challenge is Honey.  Sunbeam Tapioca 3 Tbsp Instant Tapioca 1 cup Pineapple juice 1 cup Orange juice 1 1/2 Tbsp Lemon juice 1/2 cup Canned Mandarin Orange Sections, drained 1 cup Canned Pineapple (crushed or Tidbits). drained Combine the instant tapioca, pineapple juice, and orange juice in a saucepan. Cook and stir over a medium heat until the mixture comes to a boil. Remove from heat; add the lemon juice. Cool, stirring occasionally. Add the fruit and chill until firm This is a tart dessert so if you add whip cream it sweetens it up some but I like it the way it is. W.W. points is 17 total and depending on how many serving you divide it up to give you pts. per servings.

I have started back on Weight Watcher (which I should of never strayed  from). So I went looking for a Berry recipe other than my smoothie one I make. Came across this one and   knew I had to try it. I have a thing for scones. These scones are good and even got a thumbs up from "the Man of the Place". So good that I had my limit 2 and he had the rest of what was on the plate, 4. Right now I only baked half and froze the other half for another time. It's been said in the comment section that they'll freeze well. You must try, they are moist and tasty and I'll make these again. Winter Spinach Salad

I was so happy to hear that spinach was the ingredient of choice this week. I have spinach out in the garden still, don't know if you know this but in most places spinach is a great winter crop. It has been a mild winter up until last week so the spinach has been coming along wonderfully, I needed to go pick some.  Winter Spinach Salad I can not remember if I had this salad at a restaurant, seen it on TV or read the recipe but I have been making it for a few years now. Being that I came about one of those ways I do not have a written recipe to copy here, what I'll do is just show you what I put in mine and tell you how I make it. Carrot Marmalade

I love carrots, and I have a lot of carrot recipes. This includes my  carrot cake recipe that I have here but that's not what I'm going to share today though. I'm going to post my carrot marmalade jam recipe. I had never thought about making a carrot marmalade before until last year when I was trying to find some new jam recipes to make. So well Googling I came across carrot marmalade recipes, I couldn't believe that there is actually a recipe for carrot marmalade. Once I made it and tried it, I couldn't believe how yummy it was. Sweet Potato-Beet Hash

Today is week one of "What's Cooking" over at Patchwork Times by Judy. The ingredient we were given for this week was sweet potatoes. Each week she gives you an ingredients or two and then you are to fine either a recipe you have or one from a cookbook, or the Internet. Cook your recipe and then post with a picture.
