Baking Pies in Mason Jars

Now I knew about baking cakes and bread in canning jars but I just hadn't heard about pies. When doing a google search I found an entry as early as 2007. Well on Martha yesterday she had the author of "Cutie Pies" on to make a couple of her recipes from her book.
So I just had to try this, you see that is one thing I have a good quantity of, canning jars.  I did not bake her recipe because it did not sound like something I might like and I wasn't doing to make a special trip to town just to get stuff for a pie. So I dug through my pantry and found some cherry pie filling, so it's cherry pies tonight. Now this is "the man of the place" favorite pie and I can't wait to see his expression when he is served one of these. Plus one apple for me. That's the first picture.

From what I could find out you can use any pie recipe you have.
You will need the wide mouth 1/2 pint canning jars
And your pie crust recipe or you could just get the stuff from the store pre-made.

They will bake at 375* for about 45 minutes or until golden brown.
Oven rack needs to be in the middle and the finished pies need to bake on a cookie sheet.

From the rolled out dough you'll need to have a circle, use the jar.

Place that on the bottom of the jar as even as you can get it. It will be slightly larger.

Cut a piece of dough 4 x 8 1/2

This is going to be the side of your pie, Make sure it is press lightly on the bottom and that there is about 1/2 inch around the top.
Put the filling in you choose (this a cherry) Leave about a 1/4 to 1/2 from the top. Now I did not do that on the apple. I figured it would settle some, plus I just love a fat pie.
Cut strips from the remaining dough and reform it if have to. Strips are about 3/4 inch wide. Do what you  think would look pretty. Now you'll need to make an egg wash too. Just add an egg white with a splash of water, whisk a little to mix.
Brush some egg wash on dough around rim and then place your strips on to make a lattice top crust.
I could of done that to the apple but I had a little extra dough and did not want to waste it. So I made a full crust top. Trim of excess dough and press together around the edge. That's what gets me every time, I try to make it look pretty but it just looks lumpy. Now brush top with a little egg wash.
