Egg Recipe # 13



PICKLED EGGS  

Ingredients

    • 12 hard-boiled eggs, peeled
    • 1 large empty sterilized glass jar
    • 4 cups vinegar
    • 1 teaspoon salt
    • 2 medium onions, sliced1/3cup sugar
    • 1 tablespoon pickling spices1/2 teaspoon mustard seeds 1 teaspoon celery seeds1 clove garlic

Directions

  1. Put the peeled hardboiled eggs in the large jar.
  2. Boil the remaining ingredients together for 5 minutes.
  3. Pour over the eggs in the jar.
  4. Cover; leave on counter overnight.
  5. Keeps in refrigerator for weeks, in theory.
  6. In reality, if you love pickled eggs, these will disappear.

    I thought that Easter will be here in a couple of weeks that I would give recipes using hard boiled eggs. This recipe and Recipe #11 used hard boiled eggs, plus the next two will also. I remember when my kids were young we would have a lot of eggs and at that time I did not know that many dished to use the eggs, we ate the majority of them as just eggs, so hopefully I can give you a new one or two and maybe some inspiration to look for more recipes.

  2. My grandmother used to add eggs to her pickled beets, and they were gorgeous! I loved the purple eggs! Thanks for the recipe, but I may add some beets too :)

  3. Thanks for reminding me of these, I loved them as a kid only they were bright pinkish purple because they were mixed with the pickled beets. When we cut them open the yolks were yellow surrounded by pink!

It's snowing here and I know some of you are tired of snow but here we will take the moisture any way we can get it. Plus it just gives me a reason to stay in and work on some of my projects. In this picture I'm not sure if you can make it out but in the background there are some wild turkeys that hang around the house sometime, just  chilling This project I'm working on is Spool Pin Doilies.   I had never heard of them before until Bonnie Hunter had mentioned it on her blog . She a had a viewer send her one for her sewing machine along with a pattern. I did not like the pattern but loved the idea so I decided to make up my own version. I wanted a more simple, smaller and fuller doily. So I tried different thread sizes to get one that I like. (From left to right) I tried sock yarn, which I'll redo because I think I like that look.
