Green Tomato Recipe 1


The other day I had to finish picking all the tomatoes that made it through the freeze we had last week. Which was as you can tell was a mixture of degree of ripeness, the red ones I made into spaghetti sauce. Not enough to go through the hassle of canning so I just divided it up and put it in the freezer.



Then I had 11 pounds of green ones in the bag there, so I went looking for recipes to make. I found a chutney recipe I'm going to make, but this evening I thought I would make this cake recipe I found.  I am always looking for recipes that are a little on the odd side but needs to be fairly healthy. If not I'll try to "healthy" them up and this one just jumped out at me as "ODD". Reviews were positive so what the heck, it only used 2 1/2 cups and I have plenty to spare. Put some in the food processer and chopped them up.


Then it's on to making the cake.

Ingredients:
  • 2 1/4 cups sugar
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce 
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups flour (1/2 unbleached and 1/2 whole wheat
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup pecans or walnuts
  • 1 cup raisins
  • 2 1/2 cups diced green tomatoes
  • coconut (optional)

Preparation:

Preheat oven to 350°. In mixing bowl, beat sugar, vegetable oil or shortening, eggs and vanilla until smooth and creamy. Sift together the flour, salt, baking powder, cinnamon and nutmeg; slowly beat into egg mixture. Blend well. Stir in pecans, raisins and tomatoes.
Pour into greased 9x13-inch pan. Top with coconut if desired. Bake for one hour, or until a wooden pick or cake tester inserted in center comes out clean. .

                                                             OK here is what I think.
It's not a sweet cake, reminds me of something like a combination of carrot and spice.
Taste is good, but I'm a frosting gal so I would have to add some frosting, cream cheese is always a favorite or maybe coconut pecan frosting.

It's snowing here and I know some of you are tired of snow but here we will take the moisture any way we can get it. Plus it just gives me a reason to stay in and work on some of my projects. Countdown to Autumn. 18 days

  After some thought I came up with a general "get to" list for a pre - Autumn preparation. I had mentioned a couple in the last post. I will keep those and have added a few more.
